Abstract: Scientists are in the business of coming up with new ideas, and bringing them before the public (peer review) to see if they stand up under scrutiny. If they pass muster, those new ideas become the foundations for scientific advancements made going forward, such that new ideas are laid upon each other over and over again to form the scientific consensus, or conventional thought. Journals are the medium through which scientists bring ideas from thoughts into scientific reality. The Journal of the American Oil Chemists' Society has been part of the fabric shaping scientific consensus for 100 years, in some cases bringing out foundational new ideas and in other cases reflecting the development of new tools and instruments as they have developed and evolved over the years. Each new technology has been applied to lipids, and the Journal serves as a timeline of the advancement of tools used for the analysis of fats and oils. Over and over again, throughout the years up until now, the JAOCS has shown itself to be at or near the emerging front of the scientific development of new ideas and technologies applied to lipids.
