Abstract: The methyloxolane is a 100% plant-based solvent proposed by EcoXtract® which can substitute hexane for protein defatting. The solvent has been approved as suitable for food extraction in Europe in 2023 and it is under review in the US, in UK and in Australia. EcoXtract® carried out several trials to produce high PDI white flakes and turned these proteins into hexane-free Soy Protein Isolate. This presentation will describe the process and the functional properties of the EcoXtract® soy protein isolate compared to the hexane soy protein isolate.
