Effects of different packaging materials on the quality of extra-virgin olive oil during accelerated storage

Abstract: The study aimed in developing a packaging material that can replace the common large glass bottle packaging to solve the defects of this packaging of olive oil (difficulties in packing and transportation, easy oxidation of olive oil after opening and hard quantification of the oil by customers). Extra-virgin olive oil (EVOO) was evaluated as the experimental object to study the effects of different packaging materials on the quality of EVOO during a 4-month accelerated storage. In particular, a polyethylene terephthalate (PET) bottle, a small general composite blister package (PVC/PE), and a small high-barrier composite blister package (PVC/EVOH/PE) were compared each other and to dark green glass. During accelerated shelf-life tests at 45 °C in an electric blast drying oven, the evolution of quality parameters (i.e., acid value, peroxide value, and phenolic content) was monitored. The results showed that the acid values and the peroxide values of four different packaging EVOO increased while the total tocopherol contents decreased from 0 to 120 days. The overall change rate of the quality parameters of the four packaging materials from high to low was PVC/PE, PET bottle, PVC/EVOH/PE, and dark green glass bottle (see Figure 1&2). Therefore, the small high-barrier composite blister package resulted in the best-performing packaging material in protecting EVOO quality as indicated by the quality parameters among the three plastic materials. It is a portable and quantifiable packaging material, which does not only solve the shortcomings of glass bottles, but also be able to maintain the oil quality. It has high application value in oil packaging.
