Plant proteins present important challenges for the food industry. Pennycress, a cover crop, is a source of oil for biofuel and novel proteins. A talk will demonstrate how two covercress lines have enhanced the functionality of proteins. A presenter will discuss the use of alkaline electro-activation to graft whey proteins with canola proteins to create new composite soluble proteins with superior functionality. The session will also expand on efforts to isolate sunflower protein and report results supporting the development of sunflower protein products in the future.
