This session will explore how gene editing can enhance grain and pulse crops. Pea is limited in the food industry by a residual flavor in pulse flour. CRISPR/Cas9-mediated gene editing technology was used to reduce the enzyme that leads to negative taste and smell while increasing linoleic acid content. Also, genetic engineering tools modified aspects of sorghum that drive gene expression for water usage, posing a promising future for engineering complex traits. Finally, by silencing the AiP2 gene, soybean seed protein content was increased, with no significant decrease in seed oil content.
