This session will examine new approaches to improve the nutritional properties of lipids, the concentration of phytonutrients through dry fractionation, and the development of super-high oleic oil through gene technology. A talk will examine the interesterification of new healthy zero-trans products suitable for margarine applications. Also, dry fractionation of crude palm oil concentrates phytonutrients in crude palm olein. Finally, gene technology has produced safflower oil with an oleic value greater than 90%. Removing tocopherol from the oil improved frying stability similar to canola oil.
