In this session, researchers will discuss examining water-in-oil emulsions using candelilla wax, to identify a combination that produced rheological behavior similar to commercial mayonnaise. A presentation will discuss the triacylglyceride arrangement in sub-cell structures to improve functionality and sensory properties. Also, X-ray diffraction quantifies structural polymorphs and solid fat content analysis to link temperature-dependent structural changes in the crystal network to its rheological evolution. Finally, a team determined that the instability of oleogels is caused by strain accumulated in their solid particle networks.
