This session will examine contaminants that persist in the environment and food and approaches to manage exposure or quantify limits. A talk will explore per- and polyfluoroalkyl substances (PFAS) in foods and discuss analytical challenges to developing a standard. A presentation will examine recommended controls for chlorinated paraffins in processed foods. Also, since 2018, glycidyl esters have been regulated in the European Union (EU). A 2019 event found carcinogenic mineral oil aromatic hydrocarbons (MOAH) at elevated levels in infant formula. All foods containing MOAH above a defined limit are now classified as unsafe, harmonizing the assessment of MOAH in the EU.
