This session will address the challenge of re-creating the texture and functionality of fat in plant-based foods. A presentation will address how the sensory experience, melt, and stretch properties of plant-based cheese formulations can be improved by altering the lipid phase and incorporating fermentation-derived proteins. Also, researchers will discuss methods to enhance the viscoelastic properties of modulating gelatinization to produce a high-protein plant-based cheese using simple ingredients. In addition, enzymatic glycerolysis was used to convert liquid oils into a solid fat, providing a viable choice to replace tropical and hydrogenated oils.
