This session will discuss a method that accurately analyzes a wide range of phosphatidylcholine regioisomers and expands their biological and nutritional significance. A presenter will examine whey protein phospholipid concentrate, a coproduct of whey protein isolate that is currently underutilized by the dairy industry and may serve as a source of bioactive and probiotic compounds. Also, the removal of phospholipids, called degumming, during oil processing improves physical stability and facilitates additional processing. A talk will focus on optimizing the removal of specific classes of phospholipids.
