The session will examine casein micelles' non-covalent interaction with bioactive molecules during processing. The product has the potential for use as a drug carrier for targeted, controlled release of bioactive compounds to benefit sensitive populations. A presenter will examine ways to control the extraction of whole oleosomes to tailor the properties of functional protein and oleosome-rich ingredients. Also, new plant-based ingredients facilitate the transition to a more sustainable food system. A talk will highlight steps during confocal Raman microscopy to fine-tune processing of alternative proteins to improve functionality.
