Dr. Hilary Green studied Agricultural and Environmental Chemistry at the University of California, Davis. Hilary’s PhD research focused on ensuring the authenticity and quality of high-value edible oils, with a focus on avocado oil. She developed analytical methods and identified markers to help detect avocado oil adulteration. She also published several papers that aimed to understand how natural factors such as processing, fruit varietal and grade, and region impacted the chemical composition of avocado oil. These studies have contirbuted to the avocado oil standard development effort, for which she still plays an active role. Hilary is now an ORISE Postdoctoral Fellow with the FDA and is doing research on the cross-contmaination of food allergens in various products.
