Dr. Olatunde Oladipupo Odunayo, is a postdoctoral researcher in the Food Protein and Bioproduct lab at the University of Manitoba, Canada under the supervision of Dr. Nandika Bandara. Dr. Olatunde has over a decade of experience in Food Protein and Protein Chemistry, Food Microbiology, and Food Quality. Prior to his position at the University of Manitoba. Dr. Olatunde has explored novel thermal and non-thermal technologies including Cold Plasma, Pulsed Electric Fields, and ultrasound for animal- and plant-based proteins. In his current position, Dr. Olatunde is exploring the development of sustainable protein ingredients from Canadian crops, particularly yellow yea protein.
