Purlen Sezer Okur is a food engineer by training with experience in the application of novel technologies to improve the properties of gels. Currently, her research focuses on the green processing of lipids to form natural food ingredients to be used as bioactive carriers, fat replacers, and natural food antimicrobials. Her current project, under the supervision of Dr. Ozan Ciftci, is funded by USDA NIFA Novel Foods and Manufacturing Technologies program. She is also the recipient of the Milton E. Mohr Fellowship this year. Currently, she is pursuing her Ph.D. in the food science and technology department at the University of Nebraska – Lincoln and obtained her MS and BS in Food Engineering from Middle East Technical University, Turkey.
