Ann-Dorie Webley is a PhD candidate in the department of Food Science and Technology at the University of California Davis. She studies the retention and solubilization of flavour molecules using nanostructures such as micelles and vesicles. These nanaostructures improve the delivery of hydophobic flavours. Her research uses a combination of analytical chemistry and chemical engineering principles to quantify concentrations and partition coefficients.
