Kristin is a graduate researcher in Dr. Bo Hu’s lab at the University of Minnesota. She graduated with her B.S. in Microbiology from California Polytechnic University in 2016 and spent several years conducting research in molecular immunology and disease ecology as well as gap periods spent working on organic farms. She began to pursue her Master’s degree in Microbial Engineering in 2021 in order to merge her fascination with microbes with her interests in sustainable food systems. Her current research involves fermentation to upgrade the nutritional value of cover crops for monogastric animal feed. She is dedicated to research in sustainability and after graduating she intends to pursue a career in fermentation science for alternative proteins or other bioproducts.
