Fien De Witte is working as a researcher in the domain of fats and oils. Her PhD research focusses on fat crystallization in suspensions and the use of X-ray scattering to elucidate fat crystal networks.
In this research Fien tries to close the gap between fat crystallization on nano-, meso- and microscale and fat functionality in food products on the macroscale with a special focus on the use X-ray scattering techniques.
Fien obtained her MSc degree in Bioscience Engineering: Food science and nutrition in 2019 from Ghent University.
Shortly after graduating, she started her PhD on fat crystallization at the Food Structure & Function Research Group, under supervision of promotor prof. dr. ir. Koen Dewettinck. In November 2021, Fien obtained a FWO fundamental research scholarship to continue the PhD.
