Olamide Fadairo is a Ph.D. Candidate (Food science) in the department of Food and Human Nutritional Sciences, Richardson Centre for Food Technology and Research, University of Manitoba, Winnipeg, Canada. Olamide Fadairo holds a bachelor’s degree (First class honor) in Food Technology from the University of Ibadan, Nigeria, and a master’s degree in Food Safety and Quality Engineering (distinction) from the University of Debrecen, Hungary. His doctoral research focuses on the green pretreatment and the extraction, quantification, and isolation of phenolic compounds and minor constituents from mustard and canola co-products. By extension, elucidates on the impacts of innovative (green)processing technology on the phenolic profile and other minor components of oil seeds, mainly mustard, canola, and their by-products. He currently has five (5) publications in peer-reviewed journals.
