Dr. Derek R. Dee is an assistant professor in food science at the University of British Columbia, since January 2019. Previously, he was an assistant professor at the University of Georgia, and was an Alberta Innovates Health Solutions post-doctoral fellow at the University of Alberta prior to that. He holds a PhD in Biophysics from the University of Guelph, and a MSc and BSc Hons in Food Science from the University of Guelph and University of Saskatchewan, respectively. His research seeks to understand the forces that govern protein structure and function, with an emphasis on potential applications in food, biomaterials and medicine.
