Bibek Byanju is a third-year Ph.D. student in Food science and technology at Iowa State University. His past work looked into evaluating the effect of high-power sonication pretreatment on the extraction of legume proteins, physical modification (extrusion and high-power sonication), and fermentation to increase the nutritional profile which gave an idea on the different sonication conditions, extraction of plant proteins, changes in the primary and secondary structure of the modified protein, and processing technologies might help in decreasing the anti-nutritional factors and increase the nutritional profile of the plant-based protein ingredient. Currently, he is working on the physical treatment and fermentation of corn and wheat brans by probiotic bacteria to improve the nutritional profile.
