Dr. Kacie Ho (PhD) is an Assistant Professor at the University of Hawaii at Manoa in the Department of Human Nutrition, Food and Animal Sciences. Dr. Ho's research has two main interrelated themes, bioactive compounds and colloidal delivery systems. Her research has focused on characterizing phytochemical profiles and potential bioavailability in unique tropical commodities and developing functional food grade ingredient systems for emulsion-based food systems. Dr. Ho also teaches undergraduate and graduate food science courses, including courses titled Experimental Foods, Food Science Capstone, and Advanced Food Science I. Dr. Ho has served as the AOCS H&N Secretary/Treasurer since 2018, the Treasurer for the local Hawaii chapter of the Institute of Food Technologists, and is a Lifetime Member of Phi Tau Sigma.
