Simone has a background as Msc in dairy science and technology from University of Copenhagen. In her current position as PhD fellow at Aarhus University her research is concerning modification and functionalization of rapeseed protein in order to create more sustainable protein ingredients. The focus of her research is to understand how various process treatments (i.e. wet milling, enzyme treatments, membrane filtration) affect the molecular and supramolecular properties of the rapeseed proteins, and how they interact with the other components of the matrix during processing.
