Emerson Nolasco (he/him/his)

Emerson Nolasco is a third-year Ph.D. candidate in the Department of Food Science and Technology at the University of Nebraska-Lincoln (UNL). Originally from Honduras, he obtained his bachelor’s degree in food science and technology at the Pan-American Agricultural School Zamorano in Honduras. He worked for two years as a production supervisor in a palm oil refinery in Honduras. He graduated with his master’s degree in food science and technology at UNL in December 2019 working on the bioactivity and bioaccessibility of whole egg bioactive compounds. Currently, he works on the anti-hypertensive activity of egg white hydrolysate and its effect on the gut microbiome. He finished second on AOCS H&N ePoster pitch competition in 2022 and has presented posters at IFT and the Poultry Science Association.
