Selvyn Simoes, MSc, is a PhD candidate from Ryerson University, working under Prof. Dérick Rousseau. Selvyn completed his BSc thesis on the synthesis of organic dyes for photovolteic applications. His MSc detailed the effect of emulsifiers on cocoa butter crystallization in the presence of crystalline sugar. Selvyn is now in the midst of his PhD accreditation, where he is studying structuring edible oils using a hybrid method of oleogelation and capillary suspensions. Selvyn has given several public, interactive, presentations on the science of chocolate, butter and ice cream and enjoys sharing his love of food with others.
