Hsin-Ya Tsai is a Ph.D. candidate at the Department of Agricultural Chemistry, National Taiwan University, under the supervision of Dr. Nan-Wei Su at the Food Chemistry Laboratory. Her research focuses on enzymology, biotechnology, analytical chemistry, and food chemistry. She has experience in developing analytical procedures for processing contaminants in edible oils and isolating natural products. Currently, she is working on developing an enzyme-based synthetic platform for flavonoid phosphate derivatives, aiming to improve the oral absorption of flavonoids in nutraceuticals. While enzyme catalytic systems offer advantages over microbial transformation in modifying a wider range of flavonoid substrates through phosphorylation, they also present challenges for industrial implementation. Her researchl is to overcome these challenges and establish an enzyme synthetic platform for flavonoid phosphate derivatives with industrial applications.
