Sérgio Henrique de Toledo e Silva is currently working on his doctorate thesis at the Technical University of Munich (TUM) in cooperation with the Fraunhofer Institute for Process Engineering and Packaging (IVV) and is focusing in particular on the valorization of side streams in the department of food process develoment. After obtaining a bachelor's degree in food engineering, he expanded his knowledge with a master's degree in chemical engineering at the University of Campinas (Brazil). His current research is on the recovery and characterization of dietary fibers from Macauba fruits, a potential new sustainable source of vegetable oil. To leverage the sustainable and economic potential of Macauba fruits, the proteins and dietary fibers from Macauba pulp and kernel are characterized in terms of chemical composition, functional and rheological properties. Different recovery techniques targeting a joint approach of process performance, product composition and functionality are also investigated.
