Maneesha S. Mohan is the Associate Professor and Endowed Alfred Chair in Dairy Manufacturing at the Dairy and Food Science Dept., South Dakota State University, USA. Her research interests are in novel and sustainable food processes and technologies; product structure and rheology studies; and bioactive compound delivery. She did her MS at South Dakota State University, PhD at University of Tennessee and postdoctoral positions at Pennsylvania State University and Teagasc – Irish Food and Agricultural Institute. In her area of expertise of dairy science, she has published more than 35 scholarly publications including 17 papers in high impact factor international peer-reviewed journals, 2 book chapters and 2 patents (one full and one provisional). She is also currently serving as an Adjunct Senior Lecturer at Lincoln University New Zealand, from 2022. She has established collaborations with research groups and dairy industries in the USA and around the world, with her global experience in dairy processing and technology research.
Through her research, Dr. Mohan addresses both the experimental and commercial aspects of dairy processing and technology. She also works to elucidate the fundamental science behind many process-induced changes and modification of dairy components especially milk proteins. The delivery properties of milk proteins under various conditions of processing and chemical treatment and novel processing technologies, has been of special interest to her in her research. Dr. Mohan is keen to establish collaborations with national and international dairy industries and research groups, to develop sustainable and low-cost processes, products and ingredients, that enhance the functionality and health effects of food products.
