Professor Jiakai Lu holds a degree in Mechanical Engineering from Shanghai Jiao Tong University and has worked on mathematical modeling and computational simulations of transport phenomena with a focus on interfacial flows with complex fluids for his PhD in the Department of Mechanical Engineering at Purdue University. On completion of his PhD, he worked as a postdoctoral in the Department of Food Science at Purdue University. In 2019, Jiakai joined the Department of Food Science at the University of Massachusetts Amherst as an assistant professor. While Jiakai’s research continuously focuses on advancing a fundamental understanding of interfacial transport phenomena by combining advanced computational tools, and theoretical and experimental approaches, his research also addresses practical challenges in advancing the sustainability of future food systems ranging from agrichemical applications to alternative protein-based food design and novel food processing development.
