This session will present advances in cocoa butter and palm oil treatment. Cocoa fractionation improves the quality of some cocoa butter feedstock to mitigate variations. A talk will explore blending cocoa butter alternative fats to lower production costs, improve physical properties, and decrease health risks. The session will also explore how the crystallization behaviors of oils and fats control yield and purity. Results using in situ focused beam reflectance measurements show how the crystallization behavior of palm oil in cooling conditions affects properties that impact the productivity of dry-fractionation.
