This session will describe how protein added to thicken high-fluid-content food products could be a strategy to increase protein and fluid intake for patients with dysphagia in long-term care facilities while supporting safe swallowing. A presenter will examine the efficacy of hemp seed protein isolate (HPI) and hemp seed protein hydrolysate (HPH) to address chronic degenerative diseases caused by oxidative stress. Also, a talk will focus on ovotransferrin and its derived bioactive peptides as functional food ingredients for improving bone health or preventing osteoporosis.
