Alkali neutralization and steam stripping are common deacidification methods, but each has drawbacks. The session will discuss organic solvent nanofiltration membranes for combined deacidification and desolvation with a higher yield while maintaining product quality. A talk will evaluate product flavor volatiles in relation to processing style (cold pressed and roasting) for oil and fat products. Also, enhanced spray or freeze dryers incur high capital equipment and operating costs for processors manufacturing powders. A presenter will describe a new approach using thin-film evaporators.
