This session will examine options to optimize the use of extracted fava bean protein for developing Pickering emulsion using canola oil, resulting in a green, vegan-friendly way to deliver essential bioactive molecules. A talk will discuss meat analogues prepared from pea protein isolate, hydrocolloids, and plant fibers, producing a cost-effective and sustainable product. Also, soy adhesives overwhelmingly fail cohesively when tested wet. A presenter will discuss the role of protein-protein interactions and potentially helpful protein aggregation conformations in adhesives.
