Jingnan Zhang is in her final year as a Ph.D. student with Professor Ingrid Undeland as her main supervisor in the division of Food and Nutrition Science at Chalmers University of Technology in Sweden. She holds an M.Sc. in food technology from Wageningen University in the Netherlands, and a B.Eng. in food science and engineering from China Agricultural University. Jingnan is awarded the Honored Student in 2023 AOCS Annual Meeting and Expo, the Student Travel Grant in 2022 AOCS Annual Meeting and Expo and Chalmers Research Fund. Jingnan’s research revolves around a novel clean-label processing concept, “CROSS”, which induces antioxidant-rich food side streams during the protein recovery from sensitive fish filleting coproducts by using the pH-shift method, with special interests in the oxidative stability and gelforming ability of the recovered food protein ingredients. CROSS allows more complete use of the food resources we have at hand and will stimulate industrial symbiosis.
