James Kenar is an ARS research chemist at NCAUR in Peoria, Illinois since 1999. He received his B.S. in chemistry from Bradley University, Peoria, IL and Ph.D. from The Johns Hopkins University in physical organic chemistry. He conducted postgraduate research at Duke University in Durham, NC. Jim has coauthored over 100 publications including 4 patents and 9 book chapters. He was named a fellow of the American Oil Chemists’ Society in 2016 and has served as an editor for the Journal of American Oil Chemists’ Society since 2001 where he recently finished serving as editor-in-chief (2016-2021). His research interests focus on the chemical and physical modification of lipids, oils, and starches with a special interest on starch-lipid composites, amylose inclusion complexes, and processing technologies. Jim is currently focused on developing new chemical, physical, and processing technologies for pulses, their fractions and byproducts to provide enhanced functional or nutritional benefits for food and nonfood applications.
