This session will explore techniques in food products. Rice bran oil has a balanced fatty acid profile and is a rich source of bioactive phytochemicals, but many benefits are lost during processing. A presentation will review enzymatic-free fatty acid remediation and challenges for the industrial application of rice bran oil. Another talk will examine the potential of marine bacteria as bioresources for obtaining functional monocyclic carotenoids. The session will also examine a two-step process to produce docosahexaenoic acid (DHA) from tuna oil fatty acid.
